Dies verdeutlichen nicht nur Umfragen, sondern auch die aktuellen Trends auf dem Lebensmittelmarkt. Jedoch besteht eine deutliche Diskrepanz zwischen dem Wissen über die richtige Ernährungsweise und dem tatsächlichen Essverhalten in Deutschland. Das liegt u. a. an dem veränderten Arbeits- und Alltagsleben (Flexibilität im Job, viele Singlehaushalte), die es komplizierter und nicht einfacher machen, das Bedürfnis nach gesunder Ernährung zu befriedigen. Der zuletzt veröffentlichte Ernährungsbericht der Deutschen Gesellschaft für Ernährung belegt, dass die steigende Anzahl chronischer Erkrankungen mit ungünstigen Ernährungsgewohnheiten und einer unkritischen Auswahl von Lebensmitteln zusammenhängt. So wird das individuelle Bedürfnis nach Gesundheit zunehmend zum gesellschaftlichen Thema, da Krankheiten hohe Kosten verursachen, die die Finanzierung des Gesundheitswesens immer schwieriger macht. Genau hier setzt das Functional-Food-Konzept an. Die mit speziellen gesundheitsfördernden Nähr- und Wirkstoffen (z. B. Vitamine, Antioxidantien) angereicherten Lebensmittel zielen darauf ab, einen positiven Effekt auf die Gesundheit des Konsumenten zu bewirken. Damit soll dem Verbraucher ermöglicht werden, dem Wunsch nach gesunder Ernährung in Verbindung mit möglichst großer Bequemlichkeit bei der Nahrungsaufnahme nachkommen zu können. Weiterhin soll Functional Food helfen, die Gesundheit präventiv zu fördern und damit einen Beitrag zur Verringerung der Kosten im Gesundheitssektor zu leisten.
