Le grand livre de Mathieu Pacaud marque un nouveau tournant dans la carrière du chef et met à l'honneur un savoir-faire nourri d'expériences multiples depuis plus de vingt ans. Après avoir fait son apprentissage dans le mythique restaurant familial L'Ambroisie, Mathieu Pacaud, né en 1981, occupe tous les postes en cuisine puis devient chef aux côtés de son père Bernard Pacaud en 2009. Imprégné par la quête de l'excellence et la passion de la haute gastronomie française, Mathieu Pacaud est un artiste bouillonnant qui a besoin de créer. Il prend son envol en 2015 et conçoit les deux restaurants Hexagone et Histoires à Paris. Il est aussitôt récompensé par une étoile au guide Michelin pour le premier et deux étoiles pour le second. Toujours en ébullition, fin 2016, il reprend le célèbre Divellec. Il va redonner du sang neuf à la cuisine de la mer et son audace sera récompensée par une étoile au guide rouge six mois après l'ouverture du restaurant. Parallèlement à ses aventures parisiennes, le chef renoue avec ses racines corses et installe une table d'exception pour les mois d'été au coeur du domaine de Murtoli à Sartène, où, là encore, une étoile lui est décernée. En 2018, le groupe Mathieu Pacaud devient propriétaire d'une véritable institution : le restaurant Apicius. Au moment où le chef choisit de se concentrer sur cette prestigieuse maison, Collection Mathieu Pacaud apparaît comme le point d'orgue d'une chevauchée fantastique. Ce beau livre de 816 pages est la substance extraite de deux années de cogitations du chef et de ses équipes. Une synthèse de talents qui s'exprime à travers 350 recettes présentées sous forme d'abécédaire par lequel Mathieu Pacaud nous fait profiter de sa vision contemporaine de la gastronomie.
