Il cuoco piemontese perfezionato a Parigi, ricettario pubblicato per la prima volta a Torino nel 1766 e fondato in gran parte sul francese La cuisiniere bourgeoise di Joseph Menon (Parigi, 1746), conobbe tra XVIII e XIX secolo uno straordinario successo, con oltre venti edizioni. Nel Cuoco piemontese si rintracciano le prime attestazioni in italiano di francesismi come brioche, caramel, estragon, carre e touron. La presente edizione, fondata sull'esemplare torinese del 1775, si caratterizza per la ricostruzione della storia editoriale del testo e, in virtu della presenza di un glossario integrale, per l'attenzione alla lingua (e in particolare al lessico) dell'opera.
