Les émulsions forment la base d’une large gamme de produits manufacturés aussi bien dans le domaine alimentaire qu’en pharmacie, en agrochimie ou encore en cosmétologie. Une émulsion est un système comprenant au moins deux liquides non miscibles, dont l’un est dispersé dans l’autre, sous une forme plus ou moins stable. Une émulsion est souvent décrite comme une dispersion de gouttelettes de l’une des phases dans l’autre. Pour que l’émulsion soit stable et durable, il est nécessaire d’utiliser un agent émulsionnant ou émulsifiant. Son rôle est de stabiliser le système dispersé en inhibant les phénomènes de dégradation. Les tensioactifs, les polymères et les solides divisés sont des agents émulsionnants. Ceux les plus largement utilisés sont les tensioactifs.
