Description

El principal interés de incorporar materias grasas en la alimentación animal viene determinado por ser una fuente concentrada de energía a precio competitivo. Algunas de las grasas utilizadas, son co- o sub-productos de la cadena alimentaria humana (grasas recicladas), que dependiendo de la forma en que han sido procesadas o almacenadas, pueden presentar un contenido variable de sustancias perjudiciales como ácidos grasos trans y productos de oxidación, o pueden asociarse a contaminantes como Hidrocarburos aromáticos policíclicos, Dioxinas o Furanos. Estas modificaciones afectan directamente su cualidad nutricional, disminuyen su aporte en la alimentación animal y ponen en riesgo la salud del consumidor. El presente trabajo forma parte de los resultados obtenidos por el proyecto “Feedinf fats safety” (http://www.ub.edu/feedfat/) y busca evaluar el efecto de la utilización de grasas alteradas o contaminadas sobre el rendimiento productivo y la salud de pollos de carne. Los resultados obtenidos con el empleo de herramientas moleculares, bioquímicas, microbiológicas e histológicas, pueden servir de insumos para la investigación y la generación de políticas en seguridad alimentaria.
