DISTILLERY; Santa Caterina Minas. Here the winds whisper tales of the past and the sun rises over rolling hills of agave, there lies a place of legend. The Santa Caterina Minas distillery, a mystical alchemy of ancient tradition and modern enchantment, where mezcal of unparalleled quality has flowed like a river for generations. Guarded by the revered Arrelanes family, who for over 11 lifetimes have tended the agave fields of the Oaxaca region and distilled their secrets into each bottle.
AGAVE; Cultivation This soil, like a treasure trove, is rich in minerals and nutrients, a testament to the region's volcanic past. Ash from ancient eruptions rains down, seeping into the earth and enriching the soil with a bounty of minerals and nutrients. Agave is grown both from the Arrelanes family land, share crops and wild harvested. Maturity These noble plants are patient, taking their time to reach maturity, soaking in the sun and the nutrients from the soil. And as they grow, they develop a sweet and robust character, like a fine wine, aging gracefully in the sun.
ROAST; Preparation Here, the skilled hands of the jimadores wield their machetes, cutting the hearts of the agave with reverence and purpose. The fluid motion of the blade is a testament to the jimadores' connection with the plants and their deep respect for the spirit of the land. Stacking The piñas, the sweet hearts of the agave, are stacked in the oven with care and precision by Mezcaleros. Each layer is placed in a specific pattern to ensure even heating and smoke distribution throughout the stack. Roasting The roasting of the agave is a slow and steady process, tapping into generations of knowledge to ensure the right balance of sweet smoke whispers through the agave.
DISTILLING; Milling The hearts of the agave are brought to the shredder. The shredder, a modern marvel of engineering, tears apart the fibres of the agave, revealing its sweet nectar within. The shredder performs its task with precision and speed, grinding the agave into a fine pulp, ready to release its divine essence into the waiting pots. The shredder is a testament to the evolution of the mezcal-making process, a symbol of progress that respects the ancient traditions of the past. Fermentation The mysterious and captivating process of fermentation, where the nectar of the agave transforms into the divine elixir.
TASTING NOTES; NOSE - The nose is full of notes of smoky agave, and minerality, accented by hints of roasted pineapple and a touch of dried herbs. TASTE - On the Palate, textural with delicate smoke whispers through the front, delicate seashell and minerality, with subtle peppery notes and candied fruit tones. FINISH - Mineral rich salinity, with a touch of smoke. Long lingering finsh that carries the agave note through to a slightly dryer palate.
