The rocky, mineral-rich soil here yields agave with a high sugar content, making for rich and smooth tequila.Each and every agave plant is carefully placed and nurtured for upwards of seven years. Only when a plant reaches peak maturity is it carefully harvested by our jimadors and prepared for distillation.Every morning, our jimadors walk the fields seeking out mature agave for harvest. Trained in our family’s Jicama Jima method, the jimadors use a sharp coa to prune the plant down to its heart, called a piña.
