La presente investigación se llevó a cabo para determinar la calidad nutricional de cinco variedades de semillas de alholva, a saber, NDM-120, NDM-116, NDM-80, NDM-2 y NDM-1. El peso de mil granos de la variedad NDM-120 fue máximo (14,06), seguido de NDM-116 (13,43), NDM-80 (11,90), NDM-1 (11,90) y NDM-2 (10,82). El contenido de humedad fue máximo en NDM-116 (7,53) y mínimo en NDM-80 (6,59). El contenido de proteínas fue máximo en NDM-2 (39,2%) y mínimo en NDM-1 (21,97%). Entre los distintos tratamientos, el contenido máximo de proteínas se encontró en las semillas germinadas y luego tostadas, seguidas de las germinadas, tostadas y crudas. Las semillas de alholva crudas contienen el máximo de grasa (9,23%), seguidas de las tostadas, germinadas y germinadas y luego tostadas. Los valores de fibra bruta de las diferentes variedades oscilaron entre 14,01 y 15,49. El contenido total de cenizas osciló entre el 5,70 y el 5,95%. Los valores energéticos de las distintas variedades oscilaron entre 322 y 342 Kcal por 100 g. Por tanto, se recomienda complementar el polvo de semillas de alholva crudas en distintos productos para aumentar su valor nutricional. Además, tiene propiedades farmacológicas, medicinales y terapéuticas como las de ser antidiabético, antitumoral, antiviral y antioxidante.
