Drei der insgesamt 46 deutschsprachigen mittelalterlichen Kochbücher (von denen erst elf ediert sind) werden hier zum ersten Mal zugänglich gemacht. Die Transkription der Texte ist mit einem umfangreichen Anmerkungsapparat versehen, der Verschreibungen korrigiert und Unklarheiten auszuräumen versucht. Die Übersetzung aller 596 Rezepte ins Neuhochdeutsche sowie ein ausführliches Glossar der Fachtermini erleichtern das Verständnis dieser noch unzureichend erschlossenen Quellen. Das neuhochdeutsche Sachregister verzeichnet für alle Zutaten, in welchen Rezepten sie verwendet werden. Die Rezeptkonkordanz, die auch das buoch von guoter spîse berücksichtigt, ermöglicht das Auffinden von Parallelrezepten. Die kulturhistorische Einführung geht den diätetischen Grundlagen der Kochkunst seit der Antike nach und beschreibt kulturelle Einflüsse auf das Nahrungsverhalten. Eine ausführliche Beschreibung der drei Handschriften sowie eine umfangreiche Bibliographie runden das Werk ab.
