En 2015, le prince Robert de Luxembourg a fait le pari hardi d'installer dans un hôtel particulier, au coeur du triangle d'or parisien, la cuisine d'un chef dont la modernité a aussitôt ébloui le monde de la gastronomie. Deux étoiles Michelin saluent l'audace de Christophe Pelé dans cet écrin luxueux. A deux pas des Champs-Elysées, Le Clarence est établi au sein de la demeure parisienne du domaine bordelais Clarence Dillon, illustre propriétaire de Château Haut-Brion, La Mission Haut-Brion et Château Quintus. Proposer une cuisine d'une telle liberté dans ce cadre résolument classique n'allait pas de soi. Le restaurant offre non seulement l'une des cuisines les plus étonnantes du monde, mais aussi l'une des plus belles caves de vins français. Emotion, délectation prennent toute leur ampleur dans l'atmosphère intime et raffiné de cette grande maison qui hisse l'art de vivre à la française au plus haut point. Il fallait la sensibilité et la palette de références d'une dégustatrice comme Chihiro Masui pour décrypter la partition subtile de Christophe Pelé, sa cuisine spontanée et inspirée, ses accords terre-mer qui stimulent l'intellect et envoûtent les sens. Elle hume les parfums, caresse la matière, dissèque les textures, jusqu'à faire naître l'imaginaire du goût chez son lecteur. Elle le conduit sur le chemin que l'inspiration du chef a emprunté pour prendre saveur et forme dans l'assiette. Ses narrations de plats sont autant de récits de voyage. Les photographies de Richard Haughton, d'une définition et d'une suggestion extrêmes, complètent l'expérience proposée par ce livre. Il se veut le reflet de l'expérience sensuelle et gourmande vécue à la table du Clarence.
