Product description L'Hirondelle is the iconic French fresh yeast brand from Lesaffre. Fresh yeast requires no activation, it’s ready to add straight to your breads, brioches, doughnuts, and doughs. Individually wrapped in convenient 42g portions, this 12-pack is also suitable for freezing. Freezing: We would recommend freezing the yeast as soon as you receive it. After cutting it in small cubes, it should be wrapped well in clingfilm and placed in an airtight container to protect it from excess moisture in the freezer and used within 3 months. The yeast can be used after 3 months but may become a little less effective. In this case the amount used in the recipe may need to be increased slightly to compensate for this. To defrost the yeast, we would recommend placing it in the fridge for one night. Fresh yeast softens when it’s defrosted, sometimes it even becomes gooey or straight-up liquid but it can still be used. Our compressed fresh yeast gives superior results compared to dry yeast and is ideal for use in breads that require a long, slow fermentation and rise. L’Hirondelle fresh yeast is vegan and vegetarian-friendly, free from gluten, and is certified Kosher and Halal. Directions Use directly in recipes. For freezing: Cut into small cubes, wrap well in clingfilm, place in an airtight container, and use within 3 months. To defrost, place in the fridge overnight.
