Baijiu and Huangjiu are the mainstream alcoholic drinks in China because of their long history and abundant cultural components. Both informative and interesting, this book will provide readers with a comprehensive and objective overview of Chinese alcohols.<\/p> About the Author Prof. Baoguo Sun is an Academician of the Chinese Academy of Engineering and an expert in flavor chemistry. He currently serves as the President of Beijing Technology and Business University, China. He created a characteristic molecular structural unit model for sulfur-containing meat flavors and developed a series of manufacturing technologies for many important meat flavors in China. In recent years, he devoted himself to the study of flavors in the Chinese Baijiu, and proposed that healthy Baijiu should be developed by ""looking from inside and adding from outside, intensifying through natural fermentation process"". He has chaired five projects funded by the National Natural Science Foundation of China and seven National Projects of Scientific and Technical Supporting Programs funded by the Ministry of Science and Technology of China. He has been granted more than 20 invention patents. Moreover, he has received one Second Prize of the State Technological Invention Award and three Second Prizes of National Science and Technology Progress Awards from the State Council of China.
