Product Description Since 1887, the Bologne distillery has been based on a unique terroir between the sea and the mountains. The velvety, fruity style of Bologne rums is explained by the magic that takes place between our volcanic terroir, the iodised air, the spring water, the sunset exposure of our estate and our varieties of cane. This unique alchemy enables us to sublimate the expression of each variety of cane by planting only the highest quality varieties whose aromatic potential best expresses the typical character of Bologne rums. In a constant quest for quality, Bologne has chosen to manage its estate on a parcel-by-parcel basis, which is the only way to guarantee a perfect match between the terroir and the chosen variety. Harvested at their optimum point of ripeness, our canes are immediately transported to the distillery to be crushed, fermented and distilled: their freshness is total and we prevent them from suffering premature oxidation. Bologne applies a very precise low-temperature distillation style which, thanks to our copper column, favours the expression of the terroir and our varieties of cane, as well as finesse and elegance, while preserving the aromas as best we can.
