L’esigenza di trovare e dare delle risposte scientifiche a tutta una serie di domande che hanno sempre necessitato di chiarimenti, mi ha portato ad intraprendere questo lungo cammino durato oltre un anno e mezzo, tra ricerche e studi approfonditi che ho tradotto in questo manuale, che in questa seconda edizione diventa di 370 pagine. Un viaggio che parte da un semplice chicco e si trasforma in uno dei prodotti più buoni e conosciuti al mondo: la Pizza. Un testo "condito" con consigli pratici, tabelle, formule, ricette per impasti a doppia lievitazione, impasti con autolisi e personalissimi topping per pizza Gourmet. Questa seconda edizione nasce dopo l’aver scritto altri due libri, il che mi ha aiutato ad approfondire argomenti che meritano di essere trattati in questo manuale tecnico.
