Description

Sébastien Bras fait partie de ces lignées de cuisiniers qui ont fait et font la gastronomie française. Son père, le légendaire Michel Bras, a lui-même hérité du restaurant familial dans le village de Laguiole en Aveyron. En 1992, il a ouvert Le Suquet, qui offre des vues imprenables sur le plateau de l'Aubrac : un paysage à couper le souffle, quelque part entre forêts nordiques, illusions de steppes mongoles et landes écossaises. Très vite, Michel Bras porte le restaurant à un niveau d'excellence et de reconnaissance inégalé, avec trois étoiles au Guide Michelin. Ranimant ce territoire isolé, il invente des plats devenus emblématiques comme le Gargouillou de jeunes légumes ainsi que le célèbre Coulant au chocolat. En 2009, Sébastien Bras reprend les rênes du Suquet. Comme son père avant lui, il y défend une cuisine ancrée et façonnée par la terre, une cuisine du végétal, où les cueillettes sauvages, le potager familial et le travail des producteurs locaux sont sources inépuisables de créativité. A travers archives personnelles, photographies de l'Aubrac en toutes saisons et quarante recettes emblématiques, Sébastien Bras raconte ici sa région et la passionnante histoire d'une famille hors normes, dans laquelle on se transmet le goût du beau et du bon depuis trois générations.
