This ultra-premium expression begins with 100% organic Espadín agave, cultivated for 10 years in volcanic soils without herbicides or fertilisers. The production honours centuries-old traditions: agaves are cooked in ancient volcanic rock ovens heated by Guamuchil wood, crushed using a 70-year-old Tahona wheel passed down through generations, and fermented with 100% wild microbes. The extended 14-hour distillation (rather than typical 8 hours) creates exceptional depth and complexity. Following distillation, this mezcal rests for 6 months in carefully selected American White Oak barrels, refined over 2 years to achieve perfect balance. This ageing enhances the agave's natural character whilst maintaining authentic terroir.
