PATIENTLY HANDCRAFTED: The agave is harvested after 7 years to ensure well-matured fruit with the right sugar levels, which are cooked in underground ovens for 4 days before being crushed by a stone wheel to extract the juices for fermentation

COPPER STILL, DARK GLASS BOTTLE: The mezcal is fermented in open wooden vats covered with agave fibres. The 100% agave spirit is then distilled in copper pot stills sealed with local clay and finally bottled in dark glass bottles to maintain its quality
