MADE IN THE MOUNTAINS - The high altitudes of the Oaxacan mountains provide Rooster Rojo's Mezcal with an enhanced flavour thanks to the better growth conditions of the Agave and the greater fermentation coming from the region's heights

PATIENTLY HANDCRAFTED - The agave is harvested after 7 years to ensure well-matured fruit with the right sugar levels, which are cooked in underground ovens for 4 days before being crushed by a stone wheel to extract the juices for fermentation

COPPER STILL, DARK GLASS BOTTLE - The mezcal is fermented in open wooden vats covered with agave fibres. The 100% agave spirit is then distilled in copper pot stills sealed with local clay and finally bottled in dark glass bottles to maintain its quality
