Conker Port Barrel Gin is a 70cl, 43% ABV limited edition British craft gin made by hand in Dorset by The Conker Distillery — Bournemouth's pioneering gin makers, founded in 2014 by Rupert Holloway as Dorset's first gin distillery. It is the slow, real-deal answer to the pink gin category: instead of sugar, fruit syrup or food colouring, it earns its stunning ruby-pink hue from genuine Portuguese port-cask maturation. We start with our flagship Dorset Dry Gin — ten botanicals including pine-led juniper, coriander, orris root, angelica root, cassia bark, bitter orange peel, hand-picked marsh samphire, English elderberries and hand-foraged New Forest gorse flowers, distilled in a copper pot still with pure New Forest spring water. The finished gin is then rested for 8 weeks in oak casks that previously held 5-year-old Ruby Port, sourced from a prestigious Port House in Porto, Portugal. Over those eight weeks, the gin slowly draws the aged port back out of the staves, picks up vanilla and spice from the oak, and quietly turns a deep, natural ruby-pink. No sugar. No syrups. No artificial colouring. The nose opens with vanilla oak, dried red berries and a hint of jammy red grape over the familiar Dorset juniper. The palate is the herbaceous fresh brightness of the Dry Gin balanced by woody spice and bourbon-like vanilla sweetness, with the port contributing a melody of forest fruits, sweet red grape and redcurrant. A subtle dryness from light tannins keeps everything in shape; the finish is long, sweet-spicy and warming. Each batch is genuinely limited — yielded from just two unique port casks, producing 500–800 bottles per release. Once it is gone, it is gone.
