Ferrand says the art of ageing cognac in wine barrels was a time-forgotten secret until their research uncovered it – and with Double Cask Réserve they became, to their knowledge, the first cognac producer to revive the technique in modern times. After ageing in French oak cognac barrels, the spirit receives a second maturation for one year in 225L Banyuls casks – a French sweet fortified aperitif wine – adding depth and a distinctive rancio nuance. The aroma opens with vanilla and dominant notes of red fruit, especially strawberry and cherry, followed by walnut, cinnamon and chocolate. On the palate it’s full-bodied and rich, delivering a warming, layered sip that suits slow evenings and good conversation. Craftsmanship is classic Ferrand. The cognac is made from Ugni Blanc grapes from Grande Champagne, with a 4–5 day fermentation before open-flame double distillation in a 25hL copper pot still on medium lees. Ageing begins with a mix of casks – including a portion of new 350L oak (medium toast) alongside older cognac barrels – before the Banyuls finish.
