De la table en bois à une cuisine étoilée Petit-fils et fils de bûcherons, Matthias Marc grandit dans un petit village au bord de la forêt d'Appenans, en Franche-Comté. Là-bas, on l'appelle le Parisien, et à Paris, le Jurassien. Ce chef passionné, âgé de moins de 30 ans, ouvre son deuxième restaurant en 2021, dans lequel il met à l'honneur ses racines. La forêt, la rivière, les pâturages et la vigne sont les sources d'inspiration de ce livre, comme la cuisine qu'il propose à Substance, aujourd'hui, au coeur de la ville. Délicate, surprenante et profondément ancrée dans le terroir du Jura, la cuisine de Matthias Marc a été récompensée d'une étoile au Guide Michelin. Ce livre propose sa sélection de recettes franc-comtoises ainsi que celles qui ont marqué les esprits lors de sa participation à la demi-finale de Top Chef.
