Economic and ethical significance Butchers and caterers lack a guide on how to access the Halal market, this book aims to fill that gap. The Halal market presents opportunities for trading in foods that are suitable for consumption by people of faith, specifically Muslims. Muslims consume more meat per capita than the general population, they also tend to have relatively higher disposable income, and food forms an important part of their social events. There is an estimated two billion Muslims in the world, a population projected to grow in the next decade. Butchers and caterers looking to access the Halal market need to comply with HACCP, animal welfare, Halal and other regulatory requirements. Despite its economic significance, the welfare aspect of some Halal slaughter techniques has divided the opinion of animal welfare scientist. Some animal welfare researchers have concluded that when neck cutting is performed without any form of stunning, it is perceived as a noxious stimulus. Others have argued that when performed correctly with appropriate restraint and a sharp knife, the process is humane. Improving the welfare aspects of slaughter, whether Halal conventional, must be the responsibility of every farmer, meat processor, or even meat consumers.
