In a unique approach, the author draws the reader into an in depth exploration of the origins of our current nutrition practices, describing, as it were, the influences of the Industrial Revolution, the 19th Century Health Reform Movement, the beginnings of the US standards of nutrition, and of the national food guides on US eating habits. He briefly reviews the chemical features of protein, carbohydrates and fats and their roles in metabolism and health. Transitioning to chapter-2, the author discusses the history of nutrition in human health. This broad and in depth exploration begins with an overview of the role of nutrition in ancient societies such as Mesopotamia, Greece, Egypt; it follows the progression of the Paleolithic to the Neolithic diets and introduces the reader to the devastating impacts of the famines and great plagues of the Middle-Ages. As if to create nutrition narrative that does not overwhelm Freshmen and Sophomore students with little to no science backgrounds, the author dedicates Chapter 3 to vitamin and mineral deficiencies written in an engaging story-telling narrative that depicts the main players in this fascinating discovery of vitamins and of their role in curing disease. Dr. Bissonnette then tackles the food industry, family and child nutrition, food safety, obesity, chronic disease, nutrition research in the modern age and world hunger, completing, as such, the full spectrum of the role of nutrition in health, modern health and disease.
