STRICTLY SINGLE ORIGIN & UNMIXED: Premium Greek Extra Virgin Olive Oil sourced exclusively from Phaistos, Crete (100% Koroneiki). We strictly refuse to blend oils. The unique microclimate of Phaistos naturally yields top-tier oil with consistent 0.2–0.3% acidity (proven by lab analysis), so we have no reason to blend. Sourced from 5 select producers with 8 years of proven consistency. 0.3% ACIDITY & HIGH PHENOLS: Selected via strict lab analysis and blind sommelier tests; we strictly reject any oil over 0.4% acidity. We bottle only superior batches with very low acidity (currently 0.31%) and >350 mg/kg polyphenols. It brings the aroma of nature to salads and elevates every cooked meal with a unique freshness. My personal tip: Enjoy it pure drizzled over a slice of bread with feta and oregano. Thanks to its high quality, it is also extremely heat-stable, adding rich flavor to fried dishes without burning easily.

INTENSELY FRUITY & VITAMIN E (EARLY HARVEST): Harvested early in November while the olives are still fresh, green, and unripe. This early harvest (“Agureleo”) sacrifices quantity for quality to capture the intense aroma of fresh olives and maximum nutritional value, including high Vitamin E. Unlike commercial oils, Memilon features a thick, luxurious texture and a deep green color. The taste is intensely fruity, followed by a pleasant bitterness and a light, peppery kick at the finish—the quality mark of a true, nutrient-rich EVOO.

COLD PRESSED <27°C & NITROGEN SEALED: Processed immediately after harvest using Cold Extraction (Cold Pressed) under 27°C to protect delicate nutrients. Our traditional family mill holds full ISO and FDA certifications. To guarantee absolute freshness, the oil is stored in stainless steel tanks under Nitrogen. This eliminates oxygen contact (oxidation), keeping the oil as fresh and potent as the day it was pressed until the moment it is bottled.
