My local was going to close, so, against everyone's advice, I bought half of it. Living in the countryside would otherwise have been pointless. Unlike some, I don't think pubs are doomed, bad pubs are but the same people that think pubs should be preserved as part of 'our heritage' also aren't using them. Decent pubs with nice atmospheres and clean bogs will survive. The team that run the pub ignore most of my suggestions, but I thought it would be good to make some gin for the locals and came up with the idea of blending the flavour of parsnip (because it reminds me of England and its dampness) with Asian spices (because they add excitement). I teamed up with Hugh Anderson of Downton Distillery and we made 1000 litres, more than the pub needed, so we put it up for sale online as a signed and numbered limited edition. Amazingly, it sold out within a few days rather than the few years I'd anticipated. Our experiment, intended as a bit of fun and the subject of a short film, has since turned into a gin-fuelled monster.
