Description

The most widely consumed spirit in the world, this traditional Chinese spirit is expanding its horizons to the Western world. Ming River is a sorghum-based spirit. It is produced through a long, spontaneous fermentation with native yeasts lasting two months, resulting in intense aromas of pineapple and ripe exotic fruit. It is distilled in a traditional Chinese pot still. The aging process lasts about two years and takes place in ceramic and/or steel containers. Enjoy it neat, as tradition dictates, in small glass or ceramic cups. It is also excellent in cocktails with ginger beer or exotic fruit juices such as mango, pineapple, and passion fruit. Luzhou Laojiao is the founding distillery of Strong Aroma Baijiu from Sichuan province. Located in Luzhou, at the confluence of the Tuo River and the Yangtze, the production techniques of this spirit date back to as early as the 1400s. Then, as now, the processes of saccharification and fermentation use Qu, a type of fermentation starter similar to a mother yeast.
