A unique production step in its crafting is L’Enclos, where a selection of some of the wines used are aged outdoors in oak casks. The wines lie in their barrels in the courtyard outside the Maison for 1 year. Exposed to the natural elements of the area – cold, warm, wet, dry, wind and rain – they develop complex flavours essential to the final product.
