La présente recherche a été menée pour étudier le rôle des oligo-éléments, de la catalase et du pyruvate sur la récupération des bactéries soumises à un choc froid, séparément et/ou en combinaison, la sélection des bactéries incriminées dans la contamination des aliments surgelés et la conception d'un milieu approprié qui récupère presque toutes les cellules blessées. Les bactéries étudiées étaient Escherichia coli, Salmonella spp. Staphylococcus aureus et Klebsiella pneumoniae. La température utilisée pour choquer les bactéries était de -20˚C pendant une heure. Les oligo-éléments ont donné d'excellents résultats dans la récupération des bactéries blessées. Mais le cuivre a donné des résultats satisfaisants en augmentant la croissance de la plupart des bactéries testées. Un comportement inconnu a été observé dans le cas de K. pneumoniae, qui s'est accumulé autour du cuivre et a retrouvé son comportement normal en acquérant sa capsule. Cela pourrait indiquer un concept erroné dans la classification du cuivre en tant qu'agent bactériostatique. Le magnésium a une forte capacité à récupérer les bactéries blessées ainsi que le pyruvate de sodium qui n'a pas d'effet antagoniste avec les oligo-éléments ou le pyruvate.
