El presente trabajo de título se efectuó con la finalidad de determinar el proceso más favorable para mejorar la calidad de la miel de la región de Coquimbo y evaluar su conveniencia económica. Para ello se consideró la variación de humedad y/o HMF de ésta como principal ítem de costos y beneficios implicados y basándose en el criterio de Fairtrade Labelling Organization. El trabajo se divide principalmente en dos partes. La primera explica las características de la miel y el comportamiento que tiene ésta frente a diferentes estímulos; la participación chilena en exportaciones mielíferas con respecto a otros países; la composición regional de las exportaciones nacionales y la fluctuación de los precios, destinos, y volúmenes a través de los años. La segunda parte, describe las diferentes opciones que se manejaron para mejorar los niveles de HMF y/o humedad; la elección del método de aplicación de aire seco y el diseño de un proceso del mismo, el que consta de dos alternativas; y su evaluación operativa y económica, mediante balances de masa y energía, junto con una evaluación de proyecto.
