Trocknen heiBt Entfernen von Feuchte aus einem Gut, indem die Feuchte in Dampfverwandelt und abgefilhrt wird. Damit die Feuchte verdampft, muB ihr Energie zugefilhrt werden. Trocknungstechnik ist das BemUhen, die GUter mit angemessenem Aufwand an Energie, Arbeitskraft und Hilfsmitteln so zu trocknen, daB unerwUnschte QualiHitsanderungen unterbleiben und gewUnschte stattfinden [1 ~~9]. Die Anordnungen, die zum Trocknen dienen, heiBen Trockner. Seit alters trocknen die Landwirte das Gras und die Hausfrauen die Wasche im Freien. Schon frUh benutzten die Handwerker einfache Vorrichtungen, urn Tongegenstande, Leder, Holz und Papier zu trocknen. Die heutige Industrie braucht Trockner verschiedenster Art und Leistungsfahigkeit, welche die Feuchte aus Lebensmitteln, Textilien, Chemikalien, Bergbauprodukten und vielen anderen GUtern entfernen [10]. Es gibt kaum ein Erzeugnis, das beim Herstellen oder Ge winnen nicht mindestens einmal trocknen muB; viele Stoffe durchlaufen mehrere Trocknungsvorgange. Der Zweck des Trocknens kann sehr verschieden sein. Durch Entzug von Feuchte werden viele GUter haltbar, verwendbar und brauchbar, bekommen ein besseres Aussehen und h6heren Wert, werden leichter und dichter und sind dann vorteilhafter zu transportieren. Manche Stoffe lassen sich erst nach dem Feuchte entzug weiterverarbeiten, andere mUssen get rock net werden, damit die nachfol genden Arbeitsgange mit ertraglichem Kostenaufwand ablaufen. Schlief31ich geben manche Stoffe beim Trocknen wertvolie L6sungsmittel zurUck. In der Regel soli das Gut beim Trocknen seine Form, Festigkeit, Farbe und seine wertvolien Bestandteile behalten. Mancher Stoffkann bestimmte Eigenschaften nur annehmen, wenn er hoher Temperatur ausgesetzt ist; 6fters noch schadet hohe Temperatur und rasche Trocknung.
