Second Release in the Fieldnotes Collection – Fielden Hazybower is the second chapter in our Fieldnotes collection - our love letter to the fields that make our whisky. Starting in 2024 with Hedgerow and to be introduced over four years, with each whisky, we take inspiration from different elements of our fields. Through each chapter we explore the four distinct flavour pillars or our signature expression, Fielden Rye Whisky.

A limited release of 1,000 individually numbered bottles. Hazybower was produced at our Oxford Distillery from a combination of heritage varieties of rye, wheat and barley. The grains were grown as diverse field mixtures, including fields of traditional maslin - where rye and wheat grown together. The resulting spirit was fermented and distilled with grain in a pot and column still, before it was matured in used American oak and an old Hungarian oak Tokaji wine cask.

Grain Origins Oxfordshire, Berkshire, Gloucestershire, Norfolk. Grain Composition 70% rye, 20% wheat and 10% malted barley Field Composition 38.5% Maslin (rye and wheat), 40% Rye 11.5% Wheat, 10% Barley Mashing Mash cooker, no solid separation.

This spirit was fermented and distilled with grain in a pot still and, secondly, in a column, concentrating all the flavour from our fields. It was mostly matured in used American oak casks, which previously held Fielden whisky. This maturation allowed the grain and spirit character to evolve without much oak character infusion, expressing more of the grain and fermentation profile. The unique addition is the liquid fully matured in an old Hungarian oak Tokaji sweet wine cask. This cask elevated the freshness of the liquid by boosting the citrusy zing, floral honey and ginger character from our rye.

Hazybower is vibrant and refreshing, perfect for hazy summer days in England, full of freshly cut herbs, delicate meadow flowers on country strolls and a lemon tart in the evening sun. Our signature rye spice is there with a lasting warmth to accompany you as the sun sets on another balmy day in England.
