Tasting notes: Using the fresh pressed juice from apples picked within 50 miles of the mill, our master brewers ferment cider for up to 6 months in aged oak barrels with champagne yeast before cold-filtering to create a medium dry cider that’s full of flavour and character.

Hewn from the mineral-rich bedrock of the Cotswold Hills and hauled across the landscape, The Hawkstone, a Neolithic standing stone which gives our cider its name has stood for generations, a symbol of perseverance and permanence.Today it stands proud: looking out over Gloucestershire, Herefordshire and Worcestershire and their ancient orchards, from where we gather the very finest British heritage apple varieties.
