Bayou Rum XO Mardi Gras is locally crafted using Louisiana sugarcane molasses, grown in the rich alluvial soils of the Mississippi River Delta and produced by the oldest operating American sugar mill since 1829. After fermentation, the rum is distilled in one of the finest copper pot still systems in the world. The rum is then aged for 5 years in bourbon casks and 1 additional year in Pedro Ximenez sherry casks, adding more complexity and roundness to this exceptional Ultra Premium rum

The palate is multi-layered and complex, with hints of orange marmalade and dark stone fruit. Bursts of blackcurrant, prune and oak, along with a slight sweetness - reminiscent of tupelo honey - characterize this high-end rum. The finish is long and pleasantly dry, with notes of honey, black pepper and sherry
