Description

La injera es un pan plano etíope fermentado y leudado elaborado principalmente con harina de teff. Para mejorar el contenido proteínico y la calidad sensorial de la injera, las harinas se enriquecen con fenogreco. Sin embargo, la injera elaborada sólo con harina de sorgo o con su mezcla presenta deficiencias en sus cualidades en comparación con la injera de teff. Los efectos de las proporciones de mezcla de harinas sobre la calidad de la injera se investigaron utilizando la metodología de diseño de mezclas con un diseño óptimo D. Se elaboraron catorce fórmulas de injera a partir de mezclas limitadas de sorgo (0-50%), tef (50-100%) y fenogreco (0-5%), mientras que se utilizó como control una injera elaborada sólo con harina de tef (100% harina de tef). Los análisis de los parámetros de respuesta se realizaron utilizando los métodos estándar de la AACC y la AOAC. Las variables de respuesta consideradas en este estudio fueron la tasa de curación, los factores proximales, minerales y antinutricionales y los atributos sensoriales.
