Description

Plátano (origen latino), platane (francés), plantain (inglés) o plátano macho (u hortaliza) son denominaciones usadas para referirse a las especies de musáceas que se comen cocidas o asadas, o al cultivar. Es costumbre usar Musa paradisiaca para referirse al plátano, aunque la distinción entre éste y el cambur o banana para consumo fresco es artificial. Probablemente originario del sur de Asia, se cree que pasó al África oriental y se difundió por el resto del continente, hasta llegar a Europa; sería introducido en América por fray Tomás de Verlanga en 1516. Figura entre las primeras especies propagadas a partir de tejidos vegetales. Es un ingrediente muy versátil y de uso extendido en muchas preparaciones, tanto del corpus culinario venezolano como de otros países Latinoamericanos, especialmente República Dominicana, Colombia, Ecuador y Puerto Rico. Participa directa o indirectamente en sopas, platos de resistencia, panes, contornos, postres y pasapalos, pasabocas o botanas. Este libro, además de breves reseñas sobre el cultivar y aspectos económicos relevantes, compila 131 recetas en las que, ya sea verde o maduro, actúa como el principal o uno de sus más importantes ingredientes
