Proyecto de Trabajo del año 2012 en eltema Agronomía, , Idioma: Español, Resumen: Esta guía técnica, presenta una serie de principios de control y prevención de riesgos en la seguridad de los productos alimenticios derivados de la agroindustria, basados principalmente en los planes de autocontrol; que no son más que la interrelación entre los prerrequisitos y el sistema HACCP, como apoyo en la gestión de la inocuidad, con el objetivo de simplificar los procedimientos y facilitar la efectividad del sistema. Este documento es una herramienta para facilitar el establecimiento de planes de autocontrol, considerando los principios generales de higiene de los alimentos (Internacional Codex Alimetarius, Reglamento Técnico Centroamericano y la Norma Técnica Obligatoria Nicaragüense). En la guía podrá encontrar pautas para el desarrollo de los siguientes planes: o Plan de control del agua apta para el consumo humano. o Plan de limpieza y desinfección. o Plan de formación y capacitación de manipuladores de alimentos. o Plan de mantenimiento de instalaciones, equipos y útiles. o Plan de control de plagas. o Plan de control de proveedores y suministros. o Plan de control de trazabilidad. o Plan de eliminación de sub productos y residuos. Estos planes son requerimientos mínimos para el establecimiento del control en una empresa agroalimentaria para que esta cumpla con la normativa tanto nacional como internacional; sin embargo, ha sido elaborada de manera tal que se pueda ajustar de acuerdo a las características y necesidades de las empresas agroalimentarias donde se vayan a establecer. Además, se presenta una serie de pasos a seguir para el establecimiento del sistema de Análisis de Peligros y Puntos Críticos de Control (APPCC), (HACCP, por sus siglas en inglés) y como desarrollarlos para lograr su implementación basado en sus siete principios. Nicaragua, dentro de sus normativas establece que las empresas agroalimentarias deben implementar su sistema HACCP, como prerrequisito
