For a double boiler, place the chocolate in a heatproof bowl over a pot of simmering water, ensuring the bowl does not touch the water. Stir occasionally until melted. For the microwave, heat in 15-second intervals, stirring between each, until smooth. Use the melted chocolate in recipes for cakes, brownies, cookies, and sauces to add a rich, intense chocolate flavor.
