It took their chocolatiers no less than a year to get the texture, the chocolate, the flavour and the shape just right. The challenge: the centre needed to melt in the mouth, but have enough texture to hold its shape when suspended between two slender chocolate discs. The answer: their signature, light-as-air whip.
