The Sazerac began life in New Orleans as a blend of cognac, sugar, Peychaud's Bitters and absinthe. When the phylloxera blight hit France, the following cognac shortage forced bartenders to innovate and they started making the cocktail with rye whiskey.

The Sazerac started life in New Orleans where bartenders were mixing together absinthe, cognac, sugar and Peychaud's Bitters in the 1870s. The phylloxera blight in France led to a cognac shortage, and bartenders innovated and started using rye whiskey in its place

Combine 30ml Sazerac Rye Whiskey with 25ml Seignette Cognac, 10ml sugar syrup and 3 drops of Peychaud's Bitter in a mixing glass with ice. Stir and strain into the small rocks glass

Chill a small rocks glas with ice and water, add 3 dashes of absinthe, stir, and discard the contents
