Carod - Clairette de Die Tradition, Sparkling Wine (6 x 0,75L)

With two thousand years old, Clairette de Die is a natural sparkling wine surrounded by a legend that could almost be discovered in schoolchildren's books. It would be learned that Pliny the Elder, a Roman author, already spoke in ancient times of a wine appreciated by the Voconces, the Diois ancestors. This Gallic people would have abandoned jars containing wine in a river for an entire winter and rediscovered them in the spring. From these jars, a precious liquid, sweet and sparkling, would be born. It is known today as Clairette de Die. The vineyard of the Clairette de Die AOP covers 32 villages and covers an area of 1300 hectares. The main wine communes, spread over almost 60 km along the Drôme valley, are located in small circuses where sunny slopes abound. It is a vineyard of small properties on stony hillsides difficult to work with. The Clairette de Die is distinguished by a mountainous terroir located on either side of the Drôme Valley. Under the combined climatic influences of the Vercors Highlands (summits at more than 2000 m altitude), and the Drôme Provençale, the Diois enjoys cool nights and very sunny days. The light is intense and Provencal, the seasons well marked: hot summers to the song of cicadas, cold winters and often snowy winters. The Clairette de Die Tradition is elaborated according to the ancestral method. After pressing the grapes, the juices are filtered and refrigerated and then the half-fermented must is bottled. Fermentation, slowed down by the cold, is absolutely natural and continues from grape sugar, thus giving naturally effervescent wine and this explosion of flavors. The removal of the deposit is carried out at least four months after the bottling while the wine still contains residual sugars. The Dioise method gives a wine without any addition of sugar or liqueur and very little alcohol dosed between 7 and 7.5Prozent, from the muscats and clairette grape varieties.
