Laroche Chablis 2017 Wine 75 cl (Case of 3)

Laroche Chablis is pale gold in colour. A fresh and youthful nose with complex mineral notes. The lifted, harmonious palate shows flavours of white fruit and spring blossom before the long finish. The vines are cared for in the same way as the Domaine`s own, maintaining the lively, mineral fruit character that typify good Chablis. The Chablis is harvested according to the ripeness of each plot; once each parcel has ripened harvest is done within two days to ensure the correct ripeness levels are maintained. At first, the 2012 vintage seemed to be a difficult one with unpredictable weather conditions during the growing period. However, August and September were excellent: blue sky, sunny and dry conditions, light winds and cold nights all the elements required for a complete and perfect ripening of the Chardonnay berries. This vintage with a cold maturation which implies neither heat excess nor heaviness during ripening has developed elegant, aromatic, well balanced and generously mineral wines. Each ‘climate‘ reveals its unique specificity, complexity and depth. The grapes were pressed immediately. The must was fermented in stainless steel for two weeks at 16 degree C which retained the typical freshness and purity. The entire wine went through malolactic fermentation and spent nearly six months on lees to give extra complexity and a smoother mouthfeel. Filtration was light to retain the natural body and fruit character.
