Cachaça (pronounced ka-SHA-sa) has been made in Brazil since the 1530’s. Actually, Cachaça is the first spirit ever created in the Americas and is best known today as the key ingredient needed for making a caipirinha, the national cocktail of Brazil. The ultimate celebration of the Brazilian spirit, the caipirinha is taken to a whole new level with Leblon, thanks to its lively fruity nose and smooth finish. Leblon Cachaça is craft-distilled using the traditional batch method in The Maison Leblon - the artisanal craft distillery located in Patos de Minas, in the heart of Brazil’s sugar cane country. Maison Leblon fully controls every aspect of its Cachaça production, from planting and cutting the cane right through to the final product in the bottle. Maison Leblon’s philosophy is that a great Cachaça is made in the cane field first and treats its sugar cane with the utmost care and respect to ensure that the final product represents everything that this plant has to offer. Moreover, Leblon is Bonsucro Certified, which means a demonstrated commitment to environmental and social sustainability in sugarcane production. Leblon’s dedicated team of cane cutters cut each stalk by hand with machetes. The freshly-cut sugar cane is then quickly transported to the distillery. Once there, it’s gently pressed to extract the fresh sugar cane juice, called ‘caldo de cana’. The next stage in the Leblon Cachaça process is the fermentation. This is accomplished with all-natural yeast without the use of chemicals. The distilling is done according to the original recipe in alambique copper pot stills. These are the same type of stills often used in the production of the eau-de-vie for cognac as well as many of the finest Scotch whiskies. Leblon Cachaça is distilled only once, to retain as much of the fresh cane flavour as possible. After distillation comes the special touch – ageing in French oak barrels, once used in France to age XO Cognac. Leblon Cachaça rests peacefully in these casks for up to six months, polishing the spirit without altering the fruity cane nose. Once Leblon has aged, the spirit is ready to be expertly blended. Various batches are carefully combined to achieve the final Cachaça.
