Unlike chopping boards that are produced using synthetic plastic materials, those that are crafted from wood have a natural bacterial resistance, without the need for bleach or harsh cleaning solutions. Although the mechanism that is responsible for this ‘natural defence’ is not entirely clear, it appears that bacteria are absorbed into the wood’s porous surface and neutralised by the anti-microbial chemicals that are used by living trees to protect themselves. Studies have shown that bacteria died away on wooden surfaces, but thrived on both plastic and metal. Put simply: when it comes to hygiene, wood is best.
