Die Nachfrage nach der Sorte Alphonso auf dem heimischen und internationalen Markt steigt von Tag zu Tag. Da die Frucht leicht verderblich ist, ist eine Lagerung von Mangos nicht möglich. Am Ende der Saison werden die Früchte eingemacht und gelagert. Das Aroma und der Geschmack der Alphonso-Mango bleiben auch nach der Verarbeitung erhalten, was der Hauptgrund dafür ist, dass sie für die Vermischung mit anderen Obstsorten verwendet wird. Mangofrüchte erzielen am Ende der Saison sehr niedrige Preise, erzielen jedoch bei der Verarbeitung bemerkenswert hohe Erlöse. Die Studie untersucht das Potenzial der Mischung von Alphonso mit anderen Sorten, die als Tafelobst verwendet werden und auf dem Markt reichlich verfügbar sind, wenn eine Nachfrage nach Alphonso besteht und diese auf dem Markt nicht vorrätig ist. Somit wird die Studie für alle Akteure der Mangoindustrie hilfreich sein, sofern das gemischte Mangomark bei den Verbrauchern gut ankommt. Daher ist es unerlässlich, die Fruchtfleischqualität dieser Sorten durch die Mischung mit Alphonso-Mango-Fruchtfleisch zu verbessern. Bislang gibt es kaum oder gar keine Berichte über das Misch- und Lagerverhalten von Alphonso-Mango-Fruchtfleisch mit Kesar-, Totapuri-, Ratna-, Neelam- und Sindhu-Mango-Fruchtfleisch. Daher wurde die vorliegende Forschungsarbeit mit dem Titel „Auswirkungen der Mischung von Fruchtfleisch verschiedener Mangosorten" durchgeführt.
