Soziale Werte spielten ursprünglich im Bio-Landbau eine zentrale Rolle. Durch den Konkurrenzdruck des konventionellen Lebensmitteleinzelhandels und der Discounter hat sich die Wertehaltung verändert. Stattdessen sind neue Akteure und Marktpartner hinzugekommen, die mit ganz anderen Wertvorstellungen mitspielen. Der Bio-Markt differenziert sich somit zunehmend aus. Aufgrund dieser Entwicklungen und den damit einhergehenden neuen Kundenbedürfnissen steht der Bio-Markt vor neuen Herausforderungen. In einem ganzheitlichen Ansatz gilt es, das Verhältnis zwischen den Partnern entlang der Wertschöpfungskette neu zu überdenken und den Fokus auf die ursprüngliche Wertehaltung mithilfe von Kriterien der „sozialen Nachhaltigkeit“ und „Fairness“ zu lenken. Der Ansatz bietet ein großes Potenzial zur Erschließung neuer Käufergruppen am Bio-Markt. Dennoch sind die Vorstellungen darüber, was Fairness und soziale Nachhaltigkeit konkret beinhalten, durch die zunehmende Differenzierung sehr unterschiedlich. Für die Messung der Kriterien werden in diesem Buch relevante Indikatoren zu Fairness und sozialer Nachhaltigkeit erörtert und zugeordnet.
