Die wesentlichen Rühroperationen betreffen das Homogenisieren von ineinander mischbaren Flüssigkeiten, das Intensivieren des Wärmetransportes zwischen der Flüssigkeit und der Wärmeübertragungsfläche sowie des Stofftransportes in Mehrphasensystemen, das Aufwirbeln von Feststoffteilchen in Flüssigkeiten sowie das Dispergieren von ineinander unlöslichen Flüssigkeiten. Zunächst werden die allgemeinen Aspekte des Rührens, wie Rührausrüstungen, mechanische Belastung beim Rühren, Rührleistung, Strömung und Turbulenz besprochen, eine kurze Einführung in die Rheologie, in die Dimensionsanalyse und Modellübertragung gegeben. Ausführlich werden dann alle relevanten rührtechnischen Aspekte im Detail diskutiert, wobei Wert darauf gelegt wird, daß zu jeder rührtechnischen Operation zuverlässige Dimensionierungs- und Auslegungsunterlagen vorgestellt werden.
