Cet ouvrage collectif, dédié aux transitions de phase du premier ordre liquide-solide et liquide-vapeur, fait suite à une école CNRS organisée en 2009. Il réunit l'état des connaissances dans ces deux domaines en un même ensemble, afin de permettre au lecteur de se familiariser avec ces phénomènes complexes où de nombreuses similitudes et différences existent. Cet ouvrage est structuré en deux tomes. Le premier aborde les fondements et phénomènes physiques associés aux différents changements de phase et traite ensuite de quelques appli- cations. Le second tome est consacré aux aspects plus spécifiques du changement de phase liquide-vapeur : vaporisation, condensation et liquide-solide : fusion, solidification.
