Description

A malt and barley Koji spirit aged just under a year in 40L virgin European oak casks. We experimented with three dierent levels of char to get the right balance between the vanilla notes of virgin oak and deeper charred avors. The result is a relatively young spirit with depth and complexity. The nose is sweet yet spicy, with a delicately robust palate. The spirit carries through a touch of spice and red fruits. Members-Only is an aromatic spirit from experimental distillers Empirical Spirits that is made with a combination of pearl barley, Pilsner malt, koji and Belgian Saison yeast, and has been matured in Virgin American oak casks before being bottled in August 2021.

Empirical is based in Copenhagen and is all about making something new and not being tied down with the old ways of spirit production.
